I would like to run VoLTE in my application, and also have the data rates offered by the EM series modules. Is it possible to get a FW that supports this? or do I have to use a separate modem for VoLTE?

The short answer is that no the EM/MC units do not support VoLTE, they are certified as data only products as that is essentially the sort of system they will go into, there will be a few corner use cases which require voice but they are not enough to warrant the testing.
If you want VoLTE then the RC family is your best bet.
