It is hard to debug if your platform is not stable and not under control and changing the setting as it wants

Maybe you can install a Virtual machine of Windows image and see if it will also change the setting automatically
Anyone else having a SIM card error? I tried restarting and putting the SIM back in, but it’s still not working. Any ideas on how to fix this?
